This is so simple and yet it tastes so good.
Around here we are overloaded with Rhubarb.. we are on our second picking.
I harvest the Rhubarb, wash it and cut it into small 1" cubes. Put it all in a saucepan and really I eyeball the sugar.. but maybe 1-1.5 cups of sugar for 4 cups of cut rhubarb.
Bring it to a boil and let it simmer while it breaks down to form a sauce and serve it warm with a scoop of Vanilla ice cream.. Yum!
I love Rhubarb ! your so lucky you can grow it.
